As the Star Wars movies came back (and Lucas continued to fiddle with the Original Trilogy) and technology improved, the fans took it upon themselves to create DVDs of things Lucasfilm has neglected to pay attention to. The fans also decided to save the movies in the way they remembered seeing them. (Star Wars Preservation (some of the notables are TR47, Dr. Gonzo, MeBeJedi, ISOMIX))
Beside the many fan recreations of the Original Trilogy (which Lucasfilm has said they will never officially release), there are also those who view the available material in a different light. One which stands out is a not for profit fan DVD called "Deleted Magic".

It's a fascinating journey which helps explain how Star Wars came to be Star Wars and shows glimpse of where it could have gone. Deleted Magic takes the discarded to make a presentation which explains alot of the important behind the scene footage which almost made it into Star Wars.
Other notable Star Wars fan creations:
MagnoliaFan Re-edits / The Phantom Edit/(ors) - These reshaped the new Star Wars films (The Phantom Menace and Attack of the Clones) to fit a sensability more inline (some feel) with the Original Trilogy. For instance, aliens speak another language, and thus need subtitles. Also other unsightly aspects of the Prequel Trilogy have been removed or lessened. (ie Jar Jar)
WookieGroomer Splits 2004/1977 (1981, 1983) - Another not for profit production which allows for easy comparing and contrasting of the Original Trilogy (showcased by the magnificent TR47 version) and the 2004 DVD release. (when new scenes are added or removed the other version goes blank)
Star Wars Legacy - http://www.starwarslegacy.com/ - In an effort to supplant the TR47 SW:OT preservation, is the SW:Legacy restoration. Documented in detail, this website provides step by step explanation, showcasing the results of the most extreme fan recreation to date. The results have been so spectacular, that it will most likely only be seen by it's creator.

To date I've bought Star Wars on VHS 3 times, Laserdisc twice, and DVD once. When you buy these movies, you can do anything you want with/to them. You can use them as frisbees, or you can capture them into your computer and take Boba-freaking-Fett the f#@* out of Star Wars.
What you CAN'T do, is sell such altered versions (bootlegging) or exhibit them commercially.

When George doesn't provide, the fans create.
